Per 4 persone:

750 g spinaci surgelati
100 g burro
4 uova
50 g Emmental
Noce moscata

Lessate gli spinaci, scolateli, strizzateli bene e fateli insaporire per qualche minuto nel burro fuso.

Frullate le uova con il formaggio grattugiato, una presa di sale, un pizzico di Pepe e un po' di Noce moscata.

Versate il composto sugli spinaci, alzate la fiamma e mescolate fino a che le uova saranno ben consistenti.

Servite con crostini di pane abbrustoliti.
