Dosi per 4:

4 carciofi
1/2 l Besciamella
50 g burro
1 limone
1/2 cucchiaino pangrattato fine
2 cucchiai parmigiano
3 uova

Pulire i carciofi, affettarli sottilmente e metterli in acqua e limone. Cuocerli per 15' in 30 gr di burro, salare e pepare. Mescolare alla Besciamella il formaggio grattugiato, i carciofi e i tuorli uno alla volta. Quando il composto è freddo unirvi gli albumi montati a neve soda. Versarlo in uno stampo imburrato e spolverizzato con pangrattato e infornare prima a 170oC per 30', poi a 200oC per 15'. Servire subito.
