Dosi per 4:

600 g zucchine
200 g cipolle
2 melanzane
1 peperone rosso
300 g pomodori perini
olio d'oliva

Far appassire le cipolle tritate nell'olio, unire le zucchine, il peperone e le melanzane tagliate a pezzetti e far cuocere a fiamma vivace.

Dopo 10 minuti aggiungere i pomodori passati al setaccio, salare, pepare, terminare la cottura, spolverizzare con il Basilico tritato e servire.
