PUREA DI MELANZANE

Dosi per 4.

Far cuocere a lungo in forno appena caldo 4 melanzane. Quando sono molto tenere avvolgerle in uno straccio bagnato e farle raffreddare.

Spellarle e raccogliere la polpa, tritarla finemente e condirla con sale, Pepe, 3 cucchiai di olio d'oliva e 3 cucchiai di yogourt.

Guarnire questa Purea con fette sottilissime di cipolla cruda e foglioline di Menta.

Servire con crostini di pane raffermo tostato al forno.
