Dosi per 4:

500 g patate
250 g Mozzarella
qualche foglia rucola
1 cucchiaio aceto
vino bianco
1 cucchiaino Pepe verde in grani

Lessare le patate con la buccia in acqua poco salata. Sbucciarle e tagliarle a metà. Spruzzarle con poco vino e lasciarle raffreddare. Tagliare a cubetti la Mozzarella, mondare la rucola e ridurla a striscioline. Emulsionare l'aceto con 3--4 cucchiai di olio, il sale e il Pepe pestato. Tagliare le patate a dadini, unirle alla Mozzarella e alla rucola e condire con la vinaigrette.
