Dosi per 4:

800 g melanzane
2 vasetti yogurt
1 scalogno
1 cucchiaino erba cipollina tritata

Sbucciare le melanzane, tagliarle a cubetti e farle cuocere a vapore per circa 20 minuti. Versare gli yogurt in una ciotola, salare, pepare, unire lo scalogno sbucciato e tritato e l'erba cipollina. Rovesciare i cubetti di melanzana in questa salsa, mescolare e servire tiepido o freddo.
