MELANZANE ALLA PARIGINA

Ingredienti:

Dosi per 4:

500 g melanzane
150 g prosciutto crudo
80 g parmigiano grattugiato
1 uovo
50 g burro
sale
Pepe

Tagliare le melanzane in due parti per lungo e lasciarle sotto sale per circa 1 ora.

Tritare la polpa con il prosciutto, unire il sale, il Pepe e l'uovo sbattuto.

Riempire con questo composto le melanzane, metterle in una teglia imburrata, infornare per circa 30 minuti e servire.
