Dosi per 4:

1 kg melanzane
2 spicchi aglio
olio d'oliva

Tagliate le melanzane a dadini, disponetele in uno scolapasta, salate e lasciate riposare almeno due ore. Mettete un po' d'olio d'oliva in un tegame con l'aglio, unite le melanzane e fate cuocere lentamente girando di tanto in tanto. Salate e pepate. Verso fine cottura unite un battuto di prezzemolo.
