Dosi per 4:

400 g spinaci tritati surgelati
80 g burro
4 cucchiai emmental grattugiato
2 uova
2 tuorli
400 g Besciamella pronta
pane grattato

Insaporire nel burro gli spinaci scongelati e tritati. Unire alla Besciamella l'emmental e i 2 uova interi. Salare, sbattere con una forchetta e aggiungere gli spinaci e i tuorli. Salare di nuovo. Imburrare e cospargere di pane grattato uno stampo da budino, disporvi il composto e passare in forno caldo a 180' per 20'. Servire decorato con scagliette di emmental.
