Dosi per 4:
450 g fagioli freschi o surgelati
80 g lardo tritato
2 cucchiai olio
100 g emmental a dadini

Lessare i fagioli e passarli al passaverdure. Rosolare il lardo, unire il passato di fagioli e il Pepe, mescolando fino a quando avranno assorbito il grasso, unire quindi l'emmental. Mettere l'olio in padella, unire il composto di fagioli e far friggere fino a quando il formaggio sarà sciolto. Volendo si puo' cuocere come una frittata, girandolo e facendolo dorare da ambo le parti.
