Dosi per 4:

1 cavolfiore da 1 kg. circa
70 g burro
1 bicchiere latte
2 cucchiai parmigiano grattugiato
Noce moscata

Mondare il cavolfiore, lavarlo, lessarlo per circa 10 minuti in acqua bollente salata, scolarlo, farlo intiepidire e dividerlo in cimette.

Far soffriggere il burro in un tegame, adagiarvi le cimette, salare, pepare, cospargere di Noce moscata, bagnare con il latte, farlo assorbire, spolverizzare di parmigiano e servire.
