CAPONATA ALLE ZUCCHINE

Ingredienti:

g. polpa di pomodoro
2 melanzane
2 zucchine
1 costola sedano
1 spicchio aglio
1 cipolla
pinoli
uvetta
Capperi
olio
aceto
sale
Pepe

Far rosolare nell'olio l'aglio e la cipolla tritati, unire le melanzane, le zucchine e il sedano tagliati a dadini, l'uvetta ammorbidita, i pinoli, la polpa di pomodoro, salare, pepare e far cuocere per circa 30 minuti. Aggiungere 2 cucchiai di aceto e i Capperi. Far riposare e servire.
