Dosi per 4:

8 cespi insalata belga
40 g burro
1 cucchiaio scarso farina
1 bicchiere latte
1/2 limone

Cuocere a vapore per 20' l'insalata. Preparare una Besciamella con 20 g di burro, la farina e il latte. Cuocerla per 10', salarla, unirvi 20 g di burro, un ciuffo di prezzemolo tritato, il succo e la scorza del limone. Versare la Besciamella sull'insalata e servire.
