UOVA ALLA TUNISINA

uova_tunisina Ingredienti:

Dosi per 4:

7 uova
1/2 melanzana
4 cucchiai panna liquida
2 fette fegato di vitella
50 g burro
1 cucchiaio Marsala
1/2 cipolla
sale
Pepe

Tritare la cipolla e farla imbiondire in 25 g di burro, unirvi il fegato e la melanzana tagliati a dadini. Rosolare a fuoco vivace, condire con sale e Pepe e bagnare con il marsala. Sciogliere il burro in una pirofila e versarvi le uova sbattute con la panna. Cuocerle a bagnomaria, strapazzandole con una forchetta. Verso fine cottura incorporarvi fegato, melanzana e cipolla con il sugo.
