FRITTATA FREDDA

Ingredienti:

Dosi per 4:

8 uova fresche
80 g Mozzarella affettata finemente
150 g cipolla cotta con 30 g di burro
80 g burro
sale
Pepe
Basilico tritato

Battere le uova con poco sale e Pepe bianco, unire la Mozzarella, la cipolla e il prezzemolo e mescolare bene. Scaldare il burro a color nocciola, versarvi il composto di uova, mescolare velocemente con un cucchiaio di legno, far rapprendere, girare e portare a cottura. Far raffreddare e servire.
