TROTE ALLE ERBE

(dosi x 4)
Cuocere a fuoco moderato, per 10 minuti, 4 filetti di trote salmonate con 40 g di burro. A parte far soffriggere a fuoco dolce 60 g di burro con 1 cucchiaino di erba cipollina tritata, 1 cucchiaino di trito di foglie di Basilico e 1 cucchiaino di foglie tritate di Menta. Unire 2 rossi d'uovo e 1 bicchierino di panna liquida rimescolando in continuazione. Salare, pepare e versare questa salsa sui filetti di trota. Servire immediatamente.
