SFORMATI DI ARINGHE

Dosi per 4:

Ammollare 400 g di pane raffermo in una tazza di latte, strizzarlo e setacciarlo. Unirvi 2 cucchiai di burro fuso, 2 aringhe dissalate, diliscate e tritate finemente, 3 tuorli di uovo, 1 pizzico di Pepe e, infine, 3 albumi montati a neve ferma.

Amalgamare bene il composto e distribuirlo in 4 stampini da forno imburrati. Cuocere per 25 minuti in forno già caldo a 120oC. Servire caldissimi con spicchi di limone.
