LUCCIO RIPIENO

Squamare ed eviscerare un luccio di 1 kg circa di peso. Strofinarlo dentro e fuori con sale e farlo riposare 1 ora. Farcirlo con 1/2 tazza di riso Bollito unito a 2 uova sode tritate e condito con sale e poca panna da cucina. Spen- nellare il luccio con burro fuso, co- spargerlo con pangrattato e passarlo al forno già caldo a 225' per 15 minuti. Abbassare la temperatura a 180' e lasciare il luccio in forno per altri 15 minuti.
