INSALATA DI SOGLIOLA

2 sogliole sfilettate e a striscioline
2 funghi porcini medi
songino
1 cuore lattuga
1 tuorlo d'uovo sodo
olio di nocciola o d'oliva
1 limone
Senape
sale
Pepe
Frullare tuorlo, Senape, sale e Pepe a piacere, succo di limone e 1 cucchiaio d'olio. Scottare le striscioline di sogliola in acqua bollente salata e pepata. Disporre nei singoli piatti le foglie di songino e di lattuga lavate, i funghi tagliati a fettine e unire le striscioline di sogliola. Irrorare con la salsa e servire tiepido.
