CROCCHETTE DI PESCE

Ingredienti:

Per 4:

400 g filetti di merluzzo
4 Acciughe salate
2 uova
50 g burro
4 cucchiai farina
1/2 bicchiere vino bianco
olio
sale
Pepe

Lessare il pesce e passarlo al setaccio con le Acciughe precedentemente pulite. Fare una Besciamella con il burro e la farina,diluire con il brodo del pesce ed il vino. Unire la Besciamella alla polpa passata, salare, pepare ed incorporarvi due uova. Versare il composto su un vassoio,fare delle crocchette,infarinarle e friggerle in olio bollente.
