1 cefalo da 800 g
1 costa sedano
mezza cipolla
1ciuffo prezzemolo
2 tuorli d'uovasode
4 filetti Acciuga
2 cucchiaiCapperi sott'aceto
4 cucchiaisucco di limone
Mezzo bicchierevino bianco
un cucchiaiopangrattato
1spicchioaglio
6 cucchiaiolio extravergine d'oliva
sale

Preparazione: Preparare una salsa frullando tuorli, Acciuga, prezzemolo, Capperi, aglio, limone, vino, olio, pangrattato, poco sale e Pepe. Lessare il cefalo ben pulito in una pesciera con sedano, cipolla e poco sale. Scolarlo e servirlo caldo con la salsa a parte.
