CARPA IN AGRO-DOLCE

Dosi per 4.

Soffriggere in poco burro 1 cipolla, 1 costa di sedano, 1 rapa e 1 carota tritati insieme. Condire con sale, Pepe, 2 foglie d'Alloro, 1 pizzico di timo, 1 cucchiaio di buccia di limone grattugiato e 2 cucchiai di zucchero. Bagnare con 1/2 tazza di aceto, farlo sfumare e poi bagnare con 1 tazza d'acqua. Far sobbollire per 5 minuti e passare il tutto al setaccio. In questa salsa cuocere per 15 minuti,in una padella coperta, 1 carpa di 1.2 kg di peso tagliata in 4 trance. Servire.
