ANGUILLA STUFATA

Dosi per 4.

Pulire un'anguilla di 800 g. circa, spellarla e tagliarla a pezzi. Salarla e porla in pentola con 50 g. di burro a pezzetti, il succo di un limone e 1/2 bicchiere d'acqua, 4 cucchiai di pangrattato e un generoso pizzico di Pepe nero. Incoperchiarla e cuocere al forno già caldo a 150' per 20 minuti.

Togliere il coperchio e far cuocere per altri 10 minuti. Cospargere di prezze- molo tritato e servire ben caldo accom- pagnato con patate lesse.
