SOUFFLE` DI MOZZARELLA

Ingredienti:

Dosi per 4:


100 g Mozzarella
50 g burro
25 g farina
80 g parmigiano grattugiato
2 dl panna liquida
4 uova
sale
Pepe

Fare una Besciamella con 25 g. di burro, la farina, la panna, il sale e il Pepe. Lasciarla intiepidire, unire un tuorlo, la Mozzarella tagliata a dadini, il parmigiano e gli albumi montati a neve. Versare il composto in una pirofila imburrata, far cuocere in forno a calore elevato per circa 20 minuti e servire subito ben gonfio.
