Ingredienti: 7 uova, 1 tazza di panna
liquida, 150 g.di grana grattugiato, 30
g.di burro, 20 g.di fecola, noce mosca-
ta, sale, Pepe.
Stemperare la fecola con la panna, met-
terla sul fuoco, unire il burro, il sa-
le, il Pepe, la Noce moscata, portare a
bollore, levare dal fuoco e incorporare
5 tuorli e 2 uova intere, il grana e le
5 chiare montate a neve.
Versare il composto in una pirofila im-
Burrata, infornare per 20 minuti circa
e servire immediatamente.
