SUPREMA DI POLLO FARCITA

Dosi per 4.

Amalgamare 200 g di formaggio di capra e 350 g di salmone affumicato tritato. Spalmare questa crema su 4 petti di pollo aperti, arrotolarli su se stessi e passare questi involtini nella farina, in due uova sbattute e, in fine, nel pangrattato.

Cuocere le supreme di pollo in abbondante burro, a fiamma dolce, muovendole spesso, per circa 20 minuti.

Servirle calde.
