POLPETTE ALLA PANCETTA

Ingredienti:

Dosi per 4:

400 g carne macinata
8--10 fette grandi pancetta affumicata
4 cucchiai pane grattugiato
1 uovo
olio
sale
Pepe

Far rinvenire il pane in 1 dl d'acqua, mescolarvi carne, uovo, salare e pepare. Amalgamare bene senza lavorare troppo. Formare 8--10 polpette. Eliminare la cotenna dalla pancetta e avvolgere una fettina attorno a ogni polpetta, fermandola eventualmente con uno stecchino. Disporre le polpette su due file in una teglia unta. Infornare a 200o per 25'.
