POLPETTE DI MELANZANE

Ingredienti:

Dosi per 4:

300 g carne magra tritata
450 g melanzane grigliate
1 cucchiaio cipolla affettata e imbiondita in padella con poco olio
3 tuorli d'uovo
farina
2 uova battute
pangrattato
olio
2 limoni
sale
Pepe

Unire alla carne le melanzane tritate, la cipolla, i tuorli di uovo, salare, pepare e farne un impasto omogeneo. Con le mani infarinate formare delle polpette, passarle nelle uova battute e poi nel pangrattato. Friggerle in olio fumante, sgocciolarle e servirle subito accompagnate da mezzi limoni.
