Far bollire in brodo ristretto il pollo non troppo cotto. Si leva e si mette nella casseruola colla salsa seguente: uno spicchio d'aglio due Acciughe, prezzemolo, il tutto tritato finissimo, un cucchiaio d'olio, timo, Cannella (d'ambo le parti). Si aggiunge il sugo di un limone e pochi cucchiai di brodo ristretto. Si mangia freddo.
