FESA ALLE CAROTE

Ingredienti:
Dosi per 4:
700 g fesa di vitello
4 carote
sedano
prezzemolo
50 g pancetta arrotolata
1/2 cipolla
30 g lardo
1 l brodo
10 g fecola di patate
burro
olio
panna
sale
Pepe

Steccare la carne con il lardo passato in sale e Pepe. Rosolare in poco olio e burro un trito di cipolla, prezzemolo, carote, sedano e pancetta. Rosolarvi la carne per 5' e portare a cottura unendo il brodo poco per volta. Sgrassare il fondo di cottura, passarlo al mixer, unire poca panna e 10 g di burro amalgamato con la fecola e far addensare. Servire la carne a fette con il suo sugo.
