Dosi per 4:

4 Tomini freschi o 400 g di ricotta fresca
200 g olio
succo di 2 limoni
1 pizzico sale

Mettete i Tomini in una scodella, con un cucchiaio di legno schiacciateli bene e mescolate. Unite il sale e il Pepe. Versate poco alla volta l'olio, girando continuamente come fate per la Maionese. Esaurito l'olio, unite il succo di limone. E` pronta! E` ottima consumata sugli asparagi lessi, spalmata sul pan carrè, con le verdure lesse in genere. Provenienza: RAI Televideo 23/09/1992
