SALSA PER POLLI ARROSTO O LESSI E PESCE 

Si fa venire rossa la farina nel burro, indi vi si aggiunge del brodo e sugo di limone. Quando è condensato si ritira dal fuoco aggiungendo un rosso d'uovo ben sbattuto (ogni uovo un limone).
