BAGNA FREIDA 

Dosi per 4.
Assaggiata al ristorante Tromlin di Cavoretto, fa un po' il verso alla Bagna Caoda, ma è un filino più leggera.

Per 4 persone prendete 50 g di Acciughe (di solito uso quelle già sott'olio, scolate), 50 g. d'olio extravergine d'oliva, il succo di un quarto di limone, e frullate il tutto. Usate poi la salsina per intingervi cardi crudi ed altre verdure.Provenienza: Roberto Piola 02/01/2011
