Dosi per 4:

100 g riso
300 g spinaci surgelati
150 g parmigiano grattugiato
50 g formaggio olandese
2 uova
4 foglie Salvia

Lessare il riso e metterlo in una Terrina con gli spinaci lessati tritati, i tuorli, il parmigiano, la Salvia tritata e le chiare montate a neve. Versare in uno stampo imburrato formando uno strato non più alto di 1 cm. Cospargere con il formaggio olandese a pezzetti e infornare per 35 minuti. Lasciar raffreddare, tagliare a cubetti, mettere nelle scodelle e coprire con brodo caldo.
