Dosi per 4.

Tagliare a dadini 250 g di pancetta e soffriggerla in 20 g di burro. Unirvi 2 cipolle affettate, 500 g di mele sbucciate e tagliate in 4 parti, 1 cavolo rosso tagliato a fette sottili. Innaffiare con 1/2 l di vino rosso e cuocere 5 minuti a fuoco basso. Pepare ed aggiungere 13 bacche di Ginepro. Coprire e far bollire per 1 ora e 1/2. Unire 800 g di salsiccia affumicata a pezzi e continuare la cottura per 30 minuti. Servire ben caldo.
