ZUPPA FINLANDESE

Dosi per 4.

Lessare 300 g di merluzzo e frullarlo con 20 g di burro, 2 uova, 1 manciata di prezzemolo, 40 g di pangrattato, sale e Pepe. Tritare e rosolare in 20 g di burro 3 carote, 1 porro e 1/2 sedano, bagnare con il brodo di cottura del pesce, portare a cottura gli ortaggi e aggiustare di sale.

In questo brodo bollente versare il composto di merluzzo usando un piccolo cucchiaio. Far cuocere per 10 minuti e servire.
