Dosi per 4:

100 g crema di riso
1 petto pollo
50 g burro
3 uova
1/2 bicchiere panna
3 cucchiai parmigiano grattugiato
crostini di pane

Stemperare la crema di riso con il brodo e, ottenuta una pastella, farla cadere nel brodo e cuocere per 20 minuti. Battere i rossi d'uovo, unire il petto di pollo lessato e tagliato a dadini, il burro a pezzetti, il parmigiano, la panna, la crema di riso e mescolare. Servire ben calda con i crostini di pane.
