Dosi per 4:

600 g zucchini
1 cipolla tritata
2 cucchiai olio d'oliva
3/4 l brodo di carne
2 cucchiai parmigiano grattugiato

Tagliate a dadini gli zucchini lavati e non sbucciati e soffriggeteli nell'olio caldo insieme alla cipolla tritata. Condite con sale e Pepe, aggiungete il brodo, scaldate la minestra senza cuocerla.

Servitela con del parmigiano grattugiato.
