minestra_uova_carciofi Ingredienti:

Dosi per 4:

5 carciofi di media grandezza
3 uova
4 cucchiai parmigiano grattugiato
2 cucchiai olio
1 noce burro
1/2 cipolla
1 dado
succo di 1 limone
1 pizzico Noce moscata

Tagliare a spicchi i carciofi e immergerli in acqua acidulata con limone. Soffriggere la cipolla tritata con olio e burro, unire i carciofi scolati ed asciugati, insaporirli per 5', coprirli con 1 l di acqua, unire il dado, un po' di sale e cuocere per 20'. Sbattere le uova con il parmigiano e la Noce moscata e versare a filo nel brodo. Mescolare.
