MINESTRA DI LATTUGA

minestra_lattuga Ingredienti:

Dosi per 4:

2 cespi lattuga romana
1.2 l brodo di carne
1 cipolla
50 g burro
1 cucchiaio farina
50 g parmigiano grattugiato
sale
120 g crostini dorati nel burro

Mondare l'insalata e tagliarla a striscioline sottili. Appassire la cipolla tritata con il burro, unire la farina, me scolare e, quando inizia a prendere colore, versarvi, poco a poco, il brodo bollente. Portare ad ebollizione, unire la lattuga e cuocere per circa 15' a fuoco dolce. Aggiustare di sale e servire con i crostini di pane e con parmigiano.
