Dosi per 4:

4 tuorli d'uovo
4 cucchiai parmigiano
4 cucchiai pan pesto
5 tazze brodo

Preparate il brodo, meglio se di carne. Quando sta per bollire, preparate in una Terrina i tuorli d'uova, il pane pesto e il parmigiano: mescolate bene e diluite con un po' di brodo. Appena il brodo bolle, versateci dentro il composto sbattendo bene con una forchetta per evitare che si formino dei grumi. Riportate ad ebollizione e servite.
