parmigiano grattugiato
Noce moscata

Sbattete le uova e aggiungete un cucchiaio d'acqua, sale e un pizzico di noce moscata. Preparate tante frittatine sottili che friggerete nel burro (pochissimo), per poi adagiarle su carta assorbente.

Una volta raffreddate, arrotolatele e tagliatele a listarelle sottilissime.

Quando il brodo bollirà, versate i taglierini ottenuti e servite subito con abbondante parmigiano grattugiato.
