Dosi per 4:

2 porri
2 scalogni
2 cucchiai olio
30 g burro
4 carote
1 finocchio
1 cucchiaio farina
1 l brodo
Pepe
sale

Soffriggere i porri e gli scalogni affettati nel burro e nell'olio, unire le carote e il finocchio a dadini. Spolverizzare con la farina, bagnare con il brodo, pepare, regolare di sale e cuocere per 45'. Far raffreddare, frullare, riscaldare e servire.
