Dosi per 4:

1 kg zucca gialla
250 g farina
1 uovo
80 g burro

Pulite e tagliate a fette la zucca, fatela lessare in acqua salata oppure cuocetela a vapore. Quando è cotta passatela al mulinetto e impastatela con la farina e l'uovo, amalgamando bene. Con due cucchiai formate dei piccoli Gnocchi, che getterete direttamente in acqua bollente salata, 12--15 alla volta. Sono cotti quando tornano a galla. Toglieteli delicatamente e conditeli con burro fuso e Salvia, cospargendo di parmigiano
