Le ricette di Pierre

CREMA DI PISELLI E MACCAGNO

Dosi per due:
350 g piselli freschi già sgusciati
300 ml latte
200 g patate
200 g Maccagno fresco (o Toma)
Mezzo dado
1 cipolla o scalogno
olio

Mettere la cipolla nel Bimby e tritare (5" vel.5). Aggiungere l'olio e soffriggere (6', vel.1, temp. Varoma).
Aggiungere i piselli e le patate tagliate a cubetti piccolissimi, lasciar rosolare un po' (5' vel.1, retrogrado, 100 gradi), poi aggiungere acqua, latte, dado e lasciar cuocere (30' vel. 1, 90 gradi).
Infine, aggiungere il formaggio tagliato a piccoli pezzi e frullare bene (30" vel. 7).Provenienza: Roberto Piola 16/05/2009
