Dosi per 4:

1/2 l brodo
500 g patate
1 cipolla
1/4 l latte
30 g burro
1 uovo
1/2 bicchiere crema di latte
crostini di pane

Rosolare nel burro la cipolla affettata, unire le patate tagliate a pezzi, bagnare con il latte e il brodo e quando il tutto sarà cotto passare al setaccio. Aggiungere il rosso d'uovo e la crema di latte, mescolare con cura e servire caldo con i crostini di pane.
