Dosi per 4:

600 g piselli
2 uova
1 cipolla
1 l brodo di pollo
1/2 bicchiere panna liquida
1/2 limone
1 cucchiaino Brandy

Lessare i piselli nel brodo, frullarli con la cipolla, mettere in una Terrina, amalgamarvi i tuorli, il Brandy, il Tabasco, il succo di limone e la panna.

Mescolare bene, salare, pepare, unire dei cubetti di ghiaccio, versare nei singoli piatti, cospargere di prezzemolo tritato e servire.
