CANEDERLI DI SPECK

Ingredienti:

Dosi per 4:

8 panini raffermi
2 bicchieri latte
20 g burro
100 g Speck
1 cipolla
prezzemolo
brodo
3 uova
Noce moscata
sale

Fare ammorbidire il pane nel latte bollente per 30'. Rosolare lo Speck a dadini nel burro fuso, unire cipolla e prezzemolo tritati, togliere quasi subito dal fuoco e far raffreddare. Amalgamare pane strizzato, uova, un pizzico di sale, Noce moscata e il composto di Speck, cipolla e prezzemolo. Formare polpette grandi come mandarini e cuocerle nel brodo per 15--20'.
