Dosi per 4:

1 kg cicoria
8 uova
8 fette pane

Lessate la cicoria,scolatela e mantenete l'acqua di cottura, dove metterete a bagno il pane. Quando il pane sarà umido toglietelo. Poi, sempre nella stessa acqua, cuocete un uovo alla volta, giusto il tempo di far rapprendere la chiara. Preparate quindi nel piatto: le fette di pane, la cicoria, le uova, poco sale e Pepe, olio.
