RISOTTO RUSTICO

Ingredienti:

Dosi per 4:

50 g pancetta
1 cipolla
300 g pomodori pelati
4 cucchiai olio
300 g fagioli borlotti
1/2 bicchiere vino rosso
3/4 l brodo
1 noce burro
parmigiano

Soffriggere la pancetta con la cipolla tritata, il pomodoro e l'olio. Unire il riso, farlo insaporire, aggiungere i fagioli già lessati e spruzzare con il vino. Far evaporare e portare a cottura unendo, poco alla volta, il brodo caldo. A termine, mantecare con il burro e servire con parmigiano grattugiato a piacere.
